Executive Chef, Epcot, Jens Dahlmann will be on hand for a special appearance and signing November 2 from 3:30 – 4:30p.m. at Port of Entry in Epcot.
The Epcot International Food & Wine Festival 2013 Cookbook Taste Your Way Around the World will be available to purchase at the Port of Entry and the Festival Center, upon store opening. Please note, only cookbooks purchased at Port of Entry or Festival Center on the signing day will be permitted for the signing.
About Jens Dahlmann, Executive Chef, Epcot
As executive chef at Epcot, Jens Dahlmann oversees a culinary team of 350 and also is involved in the year-round preparations for the Epcot International Food and Wine Festival. Jens started his Walt Disney World career as chef de cuisine at Flying Fish Cafe at Disney’s Boardwalk Resort. From there, Jens was chef de cuisine for the California Grill at Disney’s Contemporary Resort.
Before joining Disney, Jens had extensive experience around the world, working at the Steigenberger Park Hotel, Duesseldorf, Germany; Park Hotel, Bremen, Germany; Widder Hotel, Zurich, Switzerland; Cunard Cruise Line, Sea Goddess 2, Southeast Asia; Seabourn Cruise Line, Mediterranean Sea; and in the United States at Restaurant Le Cirque 2000, New York, as executive sous chef; and the Restaurant Café L’Europe, Palm Beach, Fla., as executive chef.
Jens specializes in Creative American cuisine, a contemporary and light approach with European basics, fresh ingredients, proper technique and interesting presentations. His passion for quality product and his diverse culinary experience are an ideal fit as he oversees the Epcot kitchens.
